Concord/Niagara Blend. Vineyard: Lake Erie Region, PA. Residual Sugar: 3.5%. ABV: 12.5%. Fermentation: Stainless Steel. Aging: Unaged. A subtle nose, but little grape aromas and foxy notes, with ripe red fruit, cinnamon, and nutmeg on the palate with light tannins. Pairs great with salty and heavy dishes, spicy foods, chili, and tacos. This wine has won 9 awards over the last three years.
Winemaker's note; We get asked all the time about the name. The story behind it is that the wine maker and his wife and child (around 2 at the time) were at the Pittsburgh Zoo and some other friends of theirs. They were taking a break with their kids near the beaver exhibit. The winemaker's wife was looking down at the beaver exhibit and very innocently says "Wow ! That's a really big beaver!" The dads lost it! And the name has stuck for almost 15 years.
