Fermentation: Components destemmed and crushed, seven-day maceration in stainless-steel, twice daily pump-overs, inoculated yeast strain. Aging: Racked out of fermentation and aged for seven months in stainless-steel before final blending, filtration, and bottling. This wine was on the original wine list in 1978 and has remained on ever since. Extremely versatile—can be paired with many different foods, chilled or room temp, or can be sipped alone. Pair it with BBQ, chicken dishes, sharp cheeses, and vinaigrette salads.
