100% tannat (from France and the Basque region of Spain brought to South America by immigrants of France and Spain. This grape is grown in a few Central Valley and Paso Robles, CA vineyards and in Virginia as well). Vineyard: Heringer Vineyards, Clarksburg, CA, Sacramento Valley. Residual Sugar: 0%. ABV: 15.5%. Fermentation: From grapes, primary on skins. Aging: Oak. Biggest of the big reds, a full-bodied dark red with high tannins, good acid, and hints of raspberry, blackberry, and leather. Pair this with fatty cured meats, lamb, game, strong aged cheeses.
